Pumpkin Chocolate Chip Muffins

There is just something about this time of year and the coolness of fall that puts me in a baking mood. I have been dying to make something with pumpkin. So I purchased some at the store and got a great recipe from a friend.

On Sunday, the kids and I made Pumpkin Chocolate Chip Muffins. They insisted that we all wear our aprons! Pay no attention to Gauge's pink elephant apron....Grace refused to switch her tie dyed one with him. lol


3.5 cups flour
3 cups sugar
2 tsp baking soda
1 tsp salt
2 tsp pumpkin spice (nutmeg&cinnamon)
2 cups pumpkin
4 eggs, beaten
1 cup Cinnamon Applesauce
2/3 cup cold water
2 cups choc chips


Mix pumpkin, egg, applesauce, water
Blend well
Add dry mix, fold in chips
Grease muffin pan and bake at 350 for 35 minutes or until done. cool in pan 10 min.

Makes about 24 muffins!!

Gotta Love Chevy Northeast Ohio

September 21st started off just like any other day. I sat down at the computer after I got the kids in bed and discovered an email from Holly (aka @TexasHolly). It started off by saying "I don’t know if you are interested, but I am looking for bloggers to participate in the month long Chevy test drive." HUH? SERIOUSLY? ME? 

I have to be initial reaction was, this can't be real! I mean who contacts little ole Lacie from small town Ohio to participate is something like this? I had heard of the Gotta Love Chevy campaign in Texas, but never Ohio. So I did what anyone in my situation would do......I Googled it! lol Sure enough there were already three bloggers over on the Chevy NEO site doing their thang.

So, this week I will be traveling to an Ohio Chevy Dealership and picking up a brand spankin' new Chevy Traverse that I get to drive for the whole entire month of October {{SQUEAL}}!! I can't wait to get it and start posting my blog/vlogs here and on the Chevy NEO Site.

Hot Spiced Tea

Fall makes me crave Pumpkin Muffins, Hot tea, and all the delicious cold weather comfort foods. One thing that I love is my Mother-in-law's Hot Wassail. I think that I've only personally made it one time...mainly because it uses ingredients that I typically don't have....and I just simply don't have the patience to prepare it.
This week I stumbled up on a blog called The Outdoor Wife. She had a recipe posted for 
"The Best Tea EVER ." With a name like could I not try it. I already had most of
The ingredients in my cupboard already. I purchased the remaining ingredients and gave it a whirl.

It's tastes and smells DELICIOUS.
I also love that it's in powdered I can make one cup at a time.
1 3/4 cups of Tang mix
1 cup of Country Time Lemonade mix
1 cup of plain instant tea
2 cups of powdered sugar
1 1/2 tsp of cinnamon
1/2 tsp of ground cloves

Mix all of this together thoroughly in a large bowl, then spoon into your storage container. Once you’ve got it properly stored, go ahead and heat up some hot water in your tea kettle. When the kettle starts howling, take two heaping spoonfuls of the Orange Spiced Tea mix and put it into your favorite mug (or add as much as you’d like to your taste). Add the hot water, give it a good stir, and take a drink.

A horse is a horse of course..

Last weekend we traveled not too far from home to the city of Delaware for their annual Horse Parade. 
Delaware has a beautiful downtown business area. We camped out in front of the court house to enjoy the festivities.

The kids were so anxious for it to get started. It was the first parade we had attended all summer...and the first ever "horse parade."

It was an absolutely gorgeous day to be out spending time with our family.

I am so happy that Shawn and I are able to give Grace the opportunity to try new sports. Last winter it was basketball , then this summer is was t-ball. Now we're trying our hand at soccer.

Grace got her first taste of soccer last February when we went to Disney. While I was in my blogging session, Shawn and the kids got to play soccer at ESPN's Wide World of Sports....and she LOVED IT!

Ever since that day, she has said that she can't wait to play soccer.

The day has finally arrived. She is now a proud member of the Gold Team.
We had our first Scrimmage this past Saturday.

She really hasn't been enjoying the practices.....but then again it was the same way with Softball. Practices were no fun....but when it came time for the games she was really in to it! So, needless to say...I was worried about how she would do. All of this combined with the fact that she's not a very aggressive child.

She shocked me! She got right in there with boy a whole head taller than her..and gave it her all!

I had so much fun watching her play and cheering for her....even though I quite literally know NOTHING about the sport of soccer! lol

Where were you?
  • Shawn and I had married less than a year. I was 23 and Shawn was 25.
  • We were living in our first apartment in Grove City (an hour away from our home town).
  • When the attack happened, I was at work (an Adult Day Care) in Reynoldsburg.
  • We were preparing to go to our morning staff meeting when one of the clients yelled to come look at the television.
  • We thought it was a joke....there was NO WAY something like that could have been happening.
  • Shortly thereafter the 2nd plane hit.
  • I remember feeling horribly helpless, scared, confused. Were we at war?
  • I needed desperately to get ahold of my loved ones. 
  • I didn't have a call phone, so I had to call using the work phone and a calling card.
  • I needed to hear their voices!!!
  • That night, I remember the sky being earily quiet above our apartment comples. Not one single plane in the sky. This was very odd considering our closeness to Port Columbus.
  • People were lining up down the road to get gas in their cars.....because we just didn't know what may happen.
  • We didn't have cable in our first apartment and no high speed we couldn't pull our eyes away from our local news station. 
  • We needed to know minute by minute what was happening.
  • I remember feeling an overwhelming sense of pride in our country as we watched the images out of New York City. What an amazing country we live in!!
May the Lord bless ALL the families that were affected that day. Those at ground zero...and those like me clear off in a small town in Ohio. We will never be the same!

Time Flies!

My mom has always told me that once I had kids, time would just fly by. I believed her....but didn't fully grasp what she meant until this week. It seems like yesterday that I was bringing home my sweet babies from the hospital. How could it already be 5 and 3 years later. How is it that my sweet "babies" are now in Kindergarten and Preschool?

The kids have been so excited about starting school. I remember that feeling as a kid. Finally getting to use that brand new book bag , wearing those shiny/sparkly new shoes, crisp new clothes and getting to use that box full of brand new school supplies

However.....our morning didn't go exactly as planned. After I took their annual school picture by the front door....Gauge proceed to get sick and start puking! Yep that's right......15 minutes before we were to head out the door. To say that I freaked out is an understatement. I was a big ball of emotions as it was, and this was just the icing on the cake. I quickly called my Mother-in-law (she lives in walking distance) to see if she could come sit with Gauge while I took Grace to her first day of Kindergarten.

Thankfully she was able to come and do that. I felt bad that the excitement of Grace's first day was tainted by the drama of having a sick brother at home. On the car ride in, I tried to be cheerful and encouraging. She was so excited to go see her friends and meet her teacher!

Thankfully Gauge's stomach bug was only about 12 hours long. I hurried up and washed the outfit he was supposed to wear to school. I was bound and determined to get a picture of him in front of his preschool.....and "pretend" it was the "first" (rather than 2nd) day of preschool. So this morning, off he went to "Big Boy School."

Gauge has been going to daycare at our school from the time he was 6 weeks old. It's like an old hat to him....he's a seasoned pro. So as Mommy delivered him to his new preschool he trotted like it was just any other day. He waved bye to me and said "Love ya Mom!"

We all survived our first days of school, and they are both loving it. On the car ride home today,
Gauge says "Mommy, do I have school tomorrow?"
Me: "Yep, you sure do."
Gauge: "Do I go to Preschool again tomorrow?"
Me: "Yep."
Gauge: "YEAH!!!!!!!!!!!!!!!!!"

I'm thinking this is going to be an awesome year!!!
