On Tuesday night around 5pm...Shawn declared that this was the night that we were going to do our freezer corn. So guess what we did until Midnight? You guessed it.
I had never done freezer corn before, so I searched the internet for ideas. I came across a million and one ways to do it...but we settled on a method where you cut the kernels off the cob first.

Thank goodness I hadn't given Grandma her large pot back yet. So into the pot went:
7 cups water
12 cups corn
3/4 cup sugar
2 T salt
We tripled the recipe for the first batch and doubled it for the second.
Boil this concoction for up to 5 minutes.

Spread onto cookie sheets to cool
Then bag it up in quart size bags with about 1/4 cup of the juice.
When we were all done, we had about a dozen quart size bags filled to the brim with scrumptious sweet corn that we will truly appreciate this winter.

ReplyDeleteThis is actually the recipe I use and was given to me by my Aunt Aldeane (Denny's cousin)....so it is a family recipe...ha. I love this recipe and it keeps the kitchen from getting so hot because you do not have to boil the corn first! Your corn looks yummy! I am sure you will enjoy it this winter. You have a wonderful hubby to help you! Great job!
